Munn Cookies

cup white sugar
2/3
cup white Crisco
1
tsp salt
2
tsp baking powder
2
eggs - room temperature
1/3
cup poppy seeds
3
cups flour
1
tsp lemon zest
2
tsp lemon juice
1
tbsp orange zest
1/4
cup orange juice
1
tsp vanilla
Preheat
oven to 400.
Cream
sugar, Crisco, eggs - really well-be patient. You can try doing
it with half-butter or using solid coconut oil but results will be
different with each technique/choice.
Add
vanilla.
Alternate
adding flour with juice blending well in between.
Stir
in zests and poppy seeds.
Roll
dough into long pieces then break off tiny bits and place on
ungreased cookie sheet. Or use whatever method suits you to get your
little blobs onto the cookie sheet.
Squash
with flat bottomed glass wrapped in saran - will need to regularly
dip in flour. They should be about 1/8th inch thick.
Bake
one tray at a time on middle rack – for 7-10 minutes. They should
be just browning when you pull them out. How big your blob of dough
is will determine how big the cookies are, don't over bake.
Recipe
makes at
least 4 baking sheets of cookies
so you
can freeze some for later.
