My recipe written down from Nana Bebe as we created gefilte fish together for passover many years back.
Nana Bebe's Gefilte Fish
1 lb. fish (whitefish, pickerel, pike)
do not use a dry fish such as sole or perch
1-2 large eggs
1 small zucchini
2 onions
1 large carrot
Cook vegetables in microwave and process fine in food processor. Saute chopped onion and process fine.
Beat eggs.
In mix-master beat fish on low just to mix. (Nana usually bought already chopped up fish) Add veggies and onions a little at a time to fish mixture and then add eggs. It should look fluffy when eggs are added.
Add about 1 tsp salt and lots of white pepper.
Add about 1/4 cup matzo meal.
Let sit while you heat a large pot of broth - preferably fish stock (Knorr brand preferred).
If you put some tapioca powder in fish it will assure fish hold together well.
Keep wetting hands as you make gefilte fish balls so they don't stick to your hands.
Boil ball of fish for 1/2 hour or more.
