Potsticker Filling
makes about 25 dumplings worth
- 1 1/2 cups finely chopped chinese or napa cabbage (more is fine too)
- 1/2 lb ground pork or turkey
- 1/2 T minced ginger
- 1/2 T soy sauce
- 1/2 tsp salt
- 1/2 cup leeks, washed and chopped
- 1/2 tsp minced garlic
- 1/2 T cornstarch
In medium bowl toss cabbage with salt. Set aside - the salt draws water out of the cabbage. After 20 minutes squeeze the cabbage dry and place in a large mixing bowl. (I've also done it omitting this whole step with fine results)
To a medium sauce pan over medium heat add pork and leeks. Season with salt and pepper. Now add ginger and stir. In a small bowl, combine soy sauce and corn starch. Stir until blended. To saute pan add garlic and saute for 30 seconds. Now add soy sauce and cornstarch. Mix well.
I simply serve the filling up in warm tortillas with hoisin sauce. Delicious and much easier than going the extra stuff to do actual potsickers.
