Nana Bebe's Cabbage Borscht Recipe
1 large can tomato juice
1 can and a half of water (You can use less water for a thicker soup)
1 very large can of chopped tomatoes
3 stocks celery chopped
3 regular onions, choped
1 small cabbage or 1/2 a large one, chopped to your preference
1 T lemon juice
1/4 cup brown sugar and 1/4 cup white sugar or more to taste up to 1/2 cup of each.
Salt & pepper to taste.
2 lbs or more of stewing beef ideally cooked overnight or all day in a crockpot
In stock pot cook up celery, onions in a bit of olive oil until soft.
Add tomato juice, water, and the rest of the ingredients except meat.
Boil for 1/2 hour. Add meat. Cover and cook for another 30-60 minutes for the flavors to fully blend.
